Method

  1. (2 options) Preheat  oven to 200 degrees, cover broccolini in oil, salt and pepper place into the oven for 8-10 minutes OR heat oil in a large pan sauté broccolini for 8-10 minutes, season with salt and pepper.
  2. Fill a large saucepan with water, put the lid on and bring to the boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the pasta. Cook pasta for 10-12 minutes.
  3. Drain and wash white beans. Finely dice onion and garlic, roughly chop tomato.
  4. Heat oil in a large pan, sauté garlic, onion and tomato, add a dash of water stir for 3-5 minutes, add herbs, mix well. Add white beans, stir well, season with salt and pepper. Add tinned tomatoes. Let simmer on a medium heat for 10-12 minutes.
  5. Drain pasta, and add to the bean mixture. Stir ingredients together until all ingredients are combined.
  6. Serve with broccolini on the side. Enjoy.
