Method
- Drain and wash white beans. Place white beans, spinach, half of lemon and water (see “ingredients you’ll need for measurements”) into a blender. Blend until smooth, set aside.
- Cook gnocchi as per packet instructions.
- Roughly chop mushrooms. Heat oil in a pan over medium-high heat. Cook the mushrooms, stirring regularly, for 4-5 mins until browned. Add 1 tsp balsamic vinegar *optional and cook, stirring, for 1 min. Remove from the heat and season with salt and pepper.
- Place gnocchi in a pan, on a low heat add the sauce stir for 2-3 minutes. Divid gnocchi among plates, top with mushrooms, nutritional yeast and squeeze the remaining lemon.
