  • Oil Of Choice
  • Salt & Pepper
  • 1 tsp balsamic vinegar
  • 1 Cup of Water For Couple Size / 2 Cups For Family Size

  1. Drain and wash white beans. Place white beans, spinach, half of lemon and water (see “ingredients you’ll need for measurements”)  into a blender. Blend until smooth, set aside.
  2. Cook gnocchi as per packet instructions.
  3. Roughly chop mushrooms. Heat oil in a pan over medium-high heat. Cook the mushrooms, stirring regularly, for 4-5 mins until browned. Add 1 tsp balsamic vinegar *optional and cook, stirring, for 1 min. Remove from the heat and season with salt and pepper.
  4. Place gnocchi in a pan, on a low heat add the sauce stir for 2-3 minutes. Divid gnocchi among plates, top with mushrooms, nutritional yeast and squeeze the remaining lemon.
