Method

  1. Firstly prepare vegetables, roughly chop mushrooms and capsicum into small bite-sized pieces. Cut stems off broccoli in halves then into small-bite size pieces.
  2. In a small mixing bowl add sesame oil, 2 tbsp of soy sauce/tamari sauce GF*, 1 tbsp of water and half of sesame seeds, mix together, set aside.
  3. Fill a saucepan with water, put the lid on and bring to a boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the udon noodles. Cook noodles for 10 minutes, do not over cook.
  4. Heat oil in a pan, add cup mushrooms, red capsicum and broccoli, pan fry vegetables for 5-7 minutes until vegetables are soft. Add half of the dressing to pan, mix ingredients well.
  5. Drain noodles, combine ingredients together in a bowl, add the remainder of the sauce.
  6. To serve sprinkle the remainder of the sesame seeds onto the noodles. Enjoy
