Method

  1. Firstly prepare vegetables, finely chop garlic, cut fresh chilli to your preference, roughly chop mushrooms, cut broccoli into bite-sized floret pieces and capsicum lengthways.
  2. In mixing bowl add sesame oil, soy sauce/tamari sauce GF*, water (see “ingredients you’ll need” for measurements) and half of sesame seeds pouchmix together, set aside.
  3. Fill a large saucepan with water, put the lid on and bring to a boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the udon noodles. Cook noodles for 10 minutes, do not over cook.
  4. Heat oil in a pan, sauté garlic for 2-3 minutes or until golden. Add mushrooms, red capsicum and zucchini, pan fry vegetables for 5-7 minutes or until vegetables are soft. Add half of the dressing to pan, mix ingredients. Drain noodles, add ingredients together in the pan, add the remainder of the sauce and mix. 
  5. To serve sprinkle the remaining sesame seeds, and fresh chilli on top. Enjoy.
