Method

  1. Preheat oven on grill to 200 degrees. Roughly cut sweet potato into bite-sized pieces (optional to peel or leave unpeeled) fill a large saucepan with water, put the lid on and bring to the boil over a high heat. Add a pinch of salt, once the water is boiling add sweet potato cook for 13-16 minutes or until soft.
  2. Finely chop garlic, and dice onion. Roughly chop mushrooms, drain and wash black beans. Heat oil in a pan, sauté garlic and onion for 2-3 minutes, add mushrooms sauté for 2-3 minutes until soften, add paprika, nutritional yeast and sugar *optional (see “ingredients you’ll need for measurements”) mix for 2 -3 minutes.
  3. Add black beans followed by tinned tomatoes, let simmer on a low heat for 5-10 minutes, whilst stirring. Drain sweet potato, place in a bowl season salt and pepper then mash. Place the bean mix at the bottom of a baking tray and top with the sweet potato mash. Place in the oven to grill until it starts to crisp on the top, approx 20 minutes.
  4. Season lettuce leaves with salt, oil and pepper serve among side pie. Enjoy.
