Method

  1. Preheat oven to 220 degrees, using a fork, prick the potatoes from top to bottom, cover in oil & salt, place on a baking tray and bake for 25-30 minutes.
  2. Finely dice the onion and garlic, chop zucchini into coins, drain and wash black beans. Heat oil in a pan, sauté onion and garlic, add cumin and paprika, and a dash of water, sauté for 2-3 minutes. Add zucchini, season with salt & pepper.
  3. Add black beans, and tinned tomatoes, stir for 5-7 minutes. Set aside.
  4. Once potatoes are cooked, halve them and  place black bean mix in the middle. Serve with nutritional yeast on top. Enjoy.
