Method

  1. Prepare vegetables chop pumpkin into small bite-size pieces, finely chop garlic, onion, and roughly chop kale.
  2. Heat oil on a pan, sauté onion and garlic for 2-3, add spice pack, stir for 2-3 minutes, add a dash of water if pan begins to stick. Add pumpkin and tinned tomatoes, stir for 2-3 minutes, season with salt & pepper.. 
  3. Add coconut milk, stir, lentils & 1 cup of water (2 cups for family), leave on medium heat for 20-25 minutes, check and stir every 10 minutes, add more water if ingredients start sticking to the pan. Add kale in the last 5 minutes, stir until kale whittles down.
  4. Serve in a bowl. Enjoy.
