Method

  1. Firstly prepare vegetables, roughly chop potato, carrot and celery. Finely chop garlic and red onion. Drain and wash lentils. Boil a kettle, add vegetable cubes and water (see “ingredients you’ll need” for measurements), stir until cubes have dissolved.
  2. Heat oil in a pan, sauté garlic, red onion for 2-3 minutes, add in celery and carrot, stir for 2-3 minutes. Add potatoes, stir well. Add in lentils and tinned tomatoes, stir for 2-3 minutes. Add in vegetable stock, stir well. Let simmer on a medium heat for 12-15 minutes.
  3. Divide evenly & serve in a bowl. Enjoy.
