Method

  1. Roughly cut sweet potato into bite-sized pieces, fill a large saucepan with water, put the lid on and bring to a boil. Add a pinch of salt, once the water is boiling add sweet potato and boil for 15 minutes.
  2. Finely chop garlic, cut zucchini into coins then in halve, roughly chop mushrooms, drain and wash black beans.
  3. Heat oil in a pan, sauté garlic, add mushrooms and zucchini mix for 2-3 minutes until soften, add cumin, paprika and 1 tbsp of soy sauce mix for 2 -3 minutes. Add black beans followed by tinned tomatoes, let simmer on a low heat for 5 minutes, whilst stiring.
  4. Drain sweet potato, in a mixing bowl add sweet potato, nutritional yeast, salt and pepper then mash.
  5. To serve make a bed of mash and place filling on top. Enjoy.
