Method

  1. Roughly chop mushrooms and brussel sprouts, dice onion and finely chop garlic. Cut Lemon in half.
  2. Fill a saucepan with water, put the lid on and bring to the boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the pasta. Cook pasta for 10-12 minutes.
  3. Heat oil in a pan, sauté onion and garlic for 2-3 minutes season with salt and pepper. Add brussel sprouts, mushroom and mixed herbs, season with salt and pepper sauté for 4-5 minutes. Squeeze lemon juice in pan. Drain pasta, add to pan, mix well.
  4. Serve with nutritional yeast on top. Enjoy.
