  1. Preheat oven to 220 degrees, using a fork, prick the potatoes from top to bottom, cover in oil & salt, place on a baking tray and bake for 25-30 minutes.
  2. Finely dice onion and garlic. Drain and wash cannellini beans. Heat oil in a pan, sauté onion and garlic, add cumin & paprika, and a dash of water, sauté for 2-3 minutes, add cannellini beans, stir for 2 -3 minutes. Add tinned tomatoes, let simmer for 5-7 minutes. Set aside.
  3. Once potatoes are cooked, halve them, & place mix in the middle. Serve with nutritional yeast on top. Enjoy.
