Recipe takes 35 minutes 🌱
- 2 Eggplants
- 1 Tin Of Brown Lentils
- 1 Tinned Tomatoes
- 1 Onion
- 2 Garlic Cloves
- 1 Tbps Turmeric
- 1 Tbps Cumin
- 1 Fresh Green Chilli
- Choice Of Oil
- Salt & Pepper
- Prepare oven to 220 degrees, cut eggplants in two half’s cover eggplant with oil, salt & pepper. Place into the oven for 25 minutes.
- Finely chop onion, chilli & garlic, heat oil in a pan and sauté for 2-3 minutes until golden. Add cumin, turmeric & chilli cook spices for 2-4 minutes.
- Drain and add lentils, stir ingredients together before adding in tinned tomatoes. Leave on a medium heat for 10 minutes.
- Take eggplant out and scoop out the middle, place filling in the middle of the roasted eggplant.
