Method
- Firstly prepare vegetables, finely chop garlic, and chilli cut mushrooms and carrot into small bite-sized pieces. Cut stems of bok choy in halves than into size pieces.
- Get a small mixing bowl add half of sesame seeds, soy sauce/tamari sauce GF* , 1 tbsp of water, chilli, 1 Tsp of sugar *optional and rice vinegar, (see ‘ingredients you’ll need’ for measurements), mix together, set aside.
- Fill a large saucepan with water, put the lid on and bring to a boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the udon noodles. Cook noodles for 10 minutes, do not over cook.
- Heat oil in a pan, sauté garlic and chilli for 2-3 minutes until golden. Add mushrooms, carrot and bok choy , pan fry vegetables for 5-7 minutes until vegetables are soft. Add half of the dressing to pan, mix ingredients.
- Drain noodles, combine ingredients together in a bowl, add the remaining sauce. To serve sprinkle the rest of the sesame seeds onto the noodles. Enjoy.
