Method

  1. Finely chop garlic and onion, roughly chop tomato, cut cauliflower into size bite sized pieces.
  2. Rinse rice until the water runs clear. Put in a small saucepan with water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed.
  3. Heat oil in a pan, sauté onion and garlic for 2-3 minutes, add spice pack, a dash of water & tomato, stir for 2-3 minutes, season with salt & pepper. Add cauliflower & stir for 3-5 minutes.
  4. Add coconut milk, red lentils & water (see ‘ingredients you’ll need’ for measurements), , stir & leave of medium heat for 20-25 minutes, check and stir each 10 minutes.
  5. Serve on a bed of rice. Enjoy.
