Method
- Finely dice shallot & fresh red chilli, deseed to preference. Roughly chop carrot, broccoli and bok choy.
- Heat oil in a pan, sauté shallot, fresh red chilli, add turmeric, curry powder and a dash of water stir for 2-3 minutes. Add soy sauce/tamari (see ‘ingredients you’ll need for measurements), followed by 1 tbsp of the coconut milk, stir for 3-5 minutes, season with salt & pepper.
- Add the rest of the coconut milk and water (see ‘ingredients you’ll need for measurements), leave on a low heat to simmer for 12 minutes. Add carrot and broccoli, into the laska, then add bok choy in the last 2 minutes.
- Boil hot water, place rice noodles into a heat proof bowl cook for 6 minutes. Drain and wash noodles, add them to the pan, stir ingredients together.
- Serve in a bowl. Enjoy.
