Finely dice shallot & fresh red chilli, deseed to preference. Roughly chop carrot, broccoli and bok choy.
Heat oil in a pan, sauté shallot, fresh red chilli, add turmeric, curry powder and a dash of water stir for 2-3 minutes. Add 1 tbsp of soy sauce/tamari, followed by 1 tbsp of the coconut milk, stir for 3-5 minutes, season with salt & pepper
Add the rest of the coconut milk and 1 & 1/2 cups of water, leave on a low heat to simmer for 12 minutes. Add carrot and broccoli, into the laska, then add bok choy in the last 2 minutes.
Boil hot water, place rice noodles into a heat proof bowl cook for 4 minutes. Drain and wash noodles, add them to the pan, stir ingredients together.
Serve in a bowl. Enjoy.
