Method
- Preheat oven to 200c, finely chop garlic, fresh red chilli, cut the cauliflower into small bite-sized florets pieces, coat in oil, place on a baking tray and into the oven for 20-25 mins or until golden.
- Rinse rice until the water runs clear. Put in a small saucepan with water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed.
- Heat oil in a pan on a medium heat, sauté garlic and fresh red chilli for 2-3 minutes, add in rice wine vinegar, maple syrup *optional, soy sauce, water and combine (see ‘ingredients you’ll need’ for measurements), leave sauce on a low heat for 2-5 minutes until it thickens. Once the sauce has thickened turn off heat and mix in cauliflower, cover completely.
- Time to plate, make a bed of rice and place the cauliflower on top, sprinkle with cashew nuts, sesame seeds and garnish with spring onion. Enjoy.
