Method

  1. Preheat oven to 200 degrees. Roughly chop onion, garlic, spring onion and kale. Cut broccoli into bite-sized pieces, and cut fresh chilli to preference.
  2. Fill a saucepan with water, put the lid on and bring to the boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the pasta. Cook pasta for 8-10 minutes.
  3. Place onion, fresh red chilli, cherry tomatoes, broccoli and garlic into a baking tray. Cover with a drizzle of oil, salt, pepper and half of the nutritional yeast packet, mix all ingredients together then place into the oven for 8-10 minutes.
  4. Drain pasta, then add into the baking tray, along with the kale mix all ingredients together. Bake for 4-6 minutes.
  5. Serve in a bowl sprinkle spring onion on top and the remaining nutritional yeast. Enjoy.
