Method

  1. Finely chop garlic, shallot and red chilli as preferred, remove seeds for less spice. Roughly chop carrot into coins, cut stalks of broccoli and into small bite-sized pieces.
  2. Boil a kettle, place noodles into a heat proof bowl, pour water over noodles, cook for 3 minutes, then run over cold water.
  3. Heat oil in a pan, sauté garlic, shallot and red chilli, until golden. Add turmeric & curry powder, 2 tbsp of soy sauce, if the pan begins to stick add a dash of water. Stir for 3-4 minutes until spices combine, add carrot, and broccolini stalks, keep the florets until end.
  4. Add coconut milk and 2 cups of water, let simmer on a medium heat for 10 minutes. Add broccoli, followed by the noodles. Stir ingredients together for 3 minutes.
  5. Dividi into portions serve in a bowl. Enjoy.
