Method

    1. Roughly chop kale, cut zucchini into coins, cherry tomatoes in half, dice onion and finely chop garlic.
    2. Fill a saucepan with water, put the lid on and bring to the boil over a high heat. Add a pinch of salt, once the water is boiling, stir in the pasta. Cook pasta for 10-12 minutes.
    3. Heat oil in a pan, sauté onion and garlic for 2-3 minutes season with salt and pepper. Add zucchini, cherry tomatoes and kale, stir for 3-4 minutes, add in tinned tomatoes, simmer for 5-6 minutes. Drain pasta, add to pan, mix well.
    4. Serve with nutritional yeast on top. Enjoy
