  1. Pre heat oven to 220 degrees, using a fork, prick the sweet potatoes from top to bottom, cover in oil & salt, place on a baking tray and bake for 25-30 minutes.

  2. Finely dice onion & garlic, cut cherry tomatoes in half, drain and wash chickpeas.

  3. Heat oil in a pan, sauté onion& garlic until golden, add chickpeas sauté for 4-5 minutes, add mixed herbs &half of nutritional yeast, add a dash of water &cherry tomatoes, sauté for 3-4 minutes. Set aside.

  4. Once sweet potato is cooked, scoop out the middle, place chickpea and mix on top. Dress with spring onion and the rest of the nutritional yeast. Enjoy
