  1. Chop zucchini into coins, wash and roughly chop salad leaves, cut cherry tomatoes and lemon in half.
  2. Heat oil on a pan, pan fry cashew nuts and zucchini until slightly golden (3-5 minutes), add paprika, salt & pepper, a dash of water in pan begins to stick.
  3. Get a mixing bowl, place salad leaves, cherry tomatoes, cashew nuts and zucchinis in,  squeeze half of the lemon juice on top, using a thongs mix ingredients together. Cut avocado in half.
  4. To serve, divide salad into two bowls, place avocado on top, squeeze the other part of the lemon.
  5. Place sesame seeds on top. Enjoy
