Method
- Firstly chop zucchini into coins, wash and chop salad leaves, cut cherry tomatoes and lemon in half.
- Heat oil on a pan, panfry cashew nuts and zucchini, add paprika, salt & pepper, and a dash of water, sauté for 3-4 minutes or until slightly golden.
- Get a large bowl, place salad leaves and cherry tomatoes into bowl, squeeze half the lemon on top. Add cashew nuts and zucchini, using a thongs mix ingredients together. Cut avocado in half.
- To serve, divide salad into two bowls, place avocado on top, squeeze the remaining half of the lemon. Place sesame seeds on top. Enjoy
