Method

  1. Firstly chop zucchini into coins, wash and chop salad leaves, cut cherry tomatoes and lemon in half.
  2. Heat oil on a pan, panfry cashew nuts and zucchini, add paprika, salt & pepper, and a dash of water, sauté for 3-4 minutes or until slightly golden.
  3. Get a large bowl, place salad leaves and cherry tomatoes into bowl, squeeze half the lemon on top. Add cashew nuts and zucchini, using a thongs mix ingredients together. Cut avocado in half.
  4. To serve, divide salad into two bowls, place avocado on top, squeeze the remaining half of the lemon. Place sesame seeds on top. Enjoy
